- 1kg Tri-Tip Steak, trimmed
- 2 tsp Brown Sugar
Directions
- If your steak is not pre-trimmed, remove as much fat as you prefer.
- Marinate the steak in ½ cup of Pow Pow sauce for 2-8 hours. Place the steak in a vacuum seal bag or zip-top bag, ensuring all the air is removed.
- Preheat the grill to 190-220°C/375-425°F and set up direct and indirect grilling zones if available.
- Take the steak out of the marinade, allowing any excess to drip off, and generously season it with Q-Nami Rub.
- Sear the steak over direct heat until it develops pronounced grill marks and is nicely charred all around. Continue cooking the steak over the indirect heat until it reaches the internal temperature reached 57°C/135°F.
- While the steak is nearing the desired temperature, in a small sauce pot or skillet, simmer ½ cup of Pow Pow sauce and the brown sugar until it thickens into a glaze. Use this glaze to brush over the steak towards the end of cooking and save some for pouring over or dipping when serving.
- After resting the steak for 10-15 minutes, slice it and serve it over rice or noodles.
