- 3 Bone-in Chicken Thighs

Lane’s Australia Brisket Seasoning
- 2 Peaches
- Rocket
- Feta
- Walnuts
- Shaved Parmesan Cheese
- Balsamic Glaze
Directions
- Preheat the smoker to 175°C.
Season the chicken with Signature and Brisket seasoning.
- Halve the peaches, removing the seeds.
- Place chicken and peaches in the smoker.
- Char and soften the peaches, and slice when cool.
- Smoke chicken until internal temperature hits 74°C.
- Mix rocket, walnuts, Parmesan, feta, and glaze.
- Serve the chicken and salad, topped with sliced peaches, and drizzle with more glaze.
