Lane’s Chilli Lime Seasoning
- 600g to 900g Fresh Pork Chorizo
- Grated Cheese
- Puff Pastry
- Butter
Directions
- Preheat the grill or smoker to 350°F.
- In a skillet or small pan, cook the chorizo over medium heat for 7-10 minutes until fully cooked. Remove excess grease to avoid sogginess.
- Lay out the puff pastry on a clean surface. Sprinkle a layer of shredded cheese, followed by the cooked chorizo, and a sprinkle of Chili Lime rub.
- Roll the puff pastry tightly, similar to rolling a sushi roll, and cut into 2-inch slices.
- Arrange the slices in a cast iron skillet or greased aluminium pan, ensuring they are touching each other to prevent spreading.
- Bake or smoke at 350ºF for 25-30 minutes until the pastry turns golden brown and crispy. Optionally, brush with melted butter for added flavour.
- Allow the rolls to rest for 5-10 minutes before serving. Enjoy!
