Ingredients
- 8 Large Prawns

5 tbsp Lane’s Kapalua Seasoning
- 2 Garlic Cloves Chopped
- 1/2 Red Onion Chopped
- 2 Strips of Grilled Capsicum Preserved in Olive Oil
- 2 tbsp Mustard
- 2 Cups Flour
- 3 Eggs
- 2 Cups of Shredded Coconut
- Limes
Directions
- Chop the garlic, onion, and capsicum finely.
- Mix prawns, chopped garlic, onion, capsicum, and mustard in a bowl, cover, and marinate for 2 hours.
- Blend Kapalua with shredded coconut.
- Prepare three bowls: one with flour, one with beaten eggs, and one with coconut Kapalua mix.
- Coat prawns in flour, then eggs, and finally the coconut Kapalua mix.
- Fry coated prawns in hot oil for 2-3 minutes.
- Drain and add fresh lime juice.
