Ingredients

Pork Loin Roast

Lane's Cubano Rub
Mojo Sauce

1 Tbsp orange zest

3/4 Cup fresh orange juice

1/4 Cup lime juice

1 Cup Corriander

1/4 Cup mint leaves
-
8 cloves garlic

2 Tsp dried oregano

2 Tsp ground cumin

1 Tbsp brown sugar
Directions
Preheat Smoker / Grill to 330f
Prepare the pork by removing the rind and any silver skin, and seasoning with Lane's Cubano Rub.
Place in your smoker and smoke till an internal of 145f for roast pork. If you're using good quality pork you can take it as far as 200f to increase the tenderness.
While the pork is cooking prepare the Mojo sauce. place olive oil, orange zest, juice, lime juice, cilantro, mint, garlic, oregano, cumin and brown sugar into a blender and blitz until combined.
Remove the pork from the smoker and allow to rest for 15mins. brush the sauce across the top of the roast. You can set aside any extra sauce to serve along with the roast.
Serve immediately with greens and roasted potatoes.
