FIESTA FOCACCIA
Well, the guys & gals over at Natural Smoke have done it again with this awesome Focaccia recipe. Russ & Sarah used Fiesta (which will be back in stock very soon) but you can use any rub you like. We have subbed in for Garlic2. Enjoy!
Ingredients:
1 tsp sugar
7g active dried yeast
100mL warm water
225g plain flour
30mL extra virgin olive oil
1 tsp salt
Lane's Fiesta or Garlic2
Tomatoes, thinly sliced
Grated Parmesan Cheese
Method:
Dissolve sugar and yeast in warm water, set aside for 10 minutes.
In a large bowl of a standing mixer, combine yeast mixture, flour and approx. 1 tablespoon Lane's Fiesta or Garlic2 rub. Using a dough hook attachment, knead for 1-2 minutes until smooth
Place dough in a lightly oiled bowl, turning to coat with oil. Cover and leave in a warm spot for 30-40 minutes or until doubled in size
Fire up your bbq (we used a Weber kettle with 2 full baskets of briquettes on either side) and pre-heat a pizza stone or slate tile
Place the dough on lightly floured surface and shape it into a long flat rectangle. Brush olive oil over the surface, and sprinkle with Lane's Fiesta or Garlic2. Cover with tomato slices and parmesan cheese
Cook in your bbq until the bottom is crisp but the centre remains soft (ours took about 10 minutes at 400-450F)
Slice and enjoy!
