- 2 Chicken Breasts, butterflied
- ¼ cup All-Purpose Flour
- 2 cup Panko Breadcrumbs
- 3 Large eggs
- 1x Medium onion, finely diced
- 1 cup Tomato Passata
- 1 tsp Sugar
- 1 tsp Garlic, minced
- 200g Ham
- 1 cup Mozzarella Cheese
- Olive oil
- Neutral Oil (we used canola oil)
Directions
- Prepare a bowl with flour and Lane’s Garlic2, mixing until incorporated.
- In a second bowl, whisk egg and set aside.
- Butterfly chicken breast and coat in seasoned flour, then into egg and then into panko breadcrumbs
- Shallow fry chicken in oil until golden brown on medium/high heat. Rest on a wire rack.
- In another pan, put in olive oil and sauté onion until translucent adding garlic and stiring for 2 minutes on low heat. Add in tomato passata and sugar and gently simmer for 5-7 minutes. Set sauce aside.
- Place ham over each piece of chicken, top with sauce and then adding equal parts of mozzarella cheese.
- Place in a Preheated oven at 200c for 5 -7 minutes until cheese is fully melted and golden brown.
- Serve with mash potatoes, chips or salad.
