- 500g Macaroni PastaÂ
- 150g Colby cheeseÂ
- 150g Mozzarella cheese + 100g for layersÂ
- 100g CheddarÂ
- 75g American CheddarÂ
- 300g Streaky Bacon
- 125g Cream CheeseÂ
- 200ml Heavy CreamÂ
- 400ml MilkÂ
- 50g Butter
- 20g All Purpose FlourÂ
- 3g Cayenne PepperÂ
- 10g SaltÂ
- 10g Black PepperÂ
- 15g Granulated GarlicÂ
Directions
- Boil pasta in salted water for 8 minutes until al dente
- Strain pasta and allow to cool while you make your cheese sauce.
- Dice bacon and cook in a a sauce pan until crispy, reserving the bacon grease in the pan.
- In the same pan on medium heat add your butter and flour and cook for 2-3 minutes to cook out the flour.
- Add you cream, milk, spices, rubs and cheese and mix until incorporated
- Mix cooked pasta back through the cheese sauce and place in a baking dish, adding little bits of cheese in layers
- Top with more mozzarella and bake at 180c / 350f for 15 minutes or until golden brown.
- Serve and enjoy
