Lane’s Kapalua Seasoning
- 1 Shot Beenleigh Rum Distillery Double Cask Rum
- 4 tbsp Salted Butter
- 1 Lemon
Directions
- To begin, prepare the sauce by melting butter in a cast iron skillet until it turns a golden-brown colour. Once golden, incorporate 1 tablespoon of Kapalua rub and stir well. Next, pour in a shot of rum and continue cooking until all the alcohol has evaporated. Meanwhile, place the halved lemon on the grill to be charred.
- Now, divide the lobster into halves and generously sprinkle them with Kapalua seasoning. Position the lobster halves on the hot grill with the flesh facing the flames. Grill for approximately 2 minutes before flipping the lobster and initiating the basting process with the butter. Continue grilling and basting for an additional 2 to 3 minutes until the lobster is fully cooked. Remember to squeeze the grilled lemon over the lobster for added flavour enhancement.
