Ingredients

1kg Ossobucco
-
Lane’s Prime Seasoning
-
1 Leek
-
2 sticks Celery
-
4 Carrots
-
A few sprigs of thyme
-
A few sprigs of rosemary
-
4 Bay leaves
-
4 Cloves
-
2 tbsp plain flour
-
400 g tin tomatoes
-
1 cup red wine
-
1L beef stock
-
2 Tbs oil
-
1kg potatoes
Directions
Preheat your BBQ nice and hot and preheat your oven to 180c.
Season your Ossobucco heavy with Lane’s Prime seasoning
Cook over coals on bbq to get a beautiful char on the outside of the meat then place indirect heat and leave while you continue the cook prep
Peel carrots then chop carrots, leek and celery in to 2cm chunks
In a ovenproof pot over low – medium heat place vegetables and oil along with thyme and rosemary and stir until soft around 20min stirring frequently
Add cloves and flour to vegetables and stir till combined
Add tin tomatoes, bay leaves, wine, beef stock and ossobuco from the bbq into pot bring to boil then cover with lid and place in oven for 5 hours
Serve with creamy mash potato
