Prepare the Roast
Preheat the Kamado Joe to 250°F (120°C) for indirect cooking.
- Pat the prime rib roast dry with paper towels.
- Trim the rib roast to remove the hard fats
- Brush the roast lightly with Southbound sauce, ensuring an even coating.
- Generously coat the roast with the PRIME rub, pressing it into the meat to form a crust.
Cook the Prime Rib
- Place the prime rib roast on the grill, fat side up, directly over the drip pan.
- Insert a meat thermometer or probe into the thickest part of the roast, avoiding bones or fat pockets.
- Close the lid and cook until the internal temperature reaches 120°F (49°C) for rare or 130°F (54°C) for medium-rare. This will take approximately 25-30 minutes per pound.
Rest and Serve
- Transfer the roast to a cutting board and loosely tent it with aluminum foil.
- Let it rest for 20-30 minutes to redistribute juices.
- Slice and serve with your favorite sides!
