Directions
- Place the pork shoulders on a cutting board and use a sharp knife to remove the skin on top, leaving as much fat on as possible.
- Rub the pork shoulders with vegetable oil and magic dust, ensuring that they are coated evenly.
- Preheat your smoker to 300°F.
- Place the pork shoulders in the smoker and smoke until the internal temperature reaches 160°F.
- Remove the pork shoulders from the smoker and sprinkle granulated honey on top. Drizzle Kinda Sweet BBQ sauce over the honey.
- Wrap each pork shoulder tightly in foil and return to the smoker. Smoke until the internal temperature reaches 200°F.
- Remove the pork shoulders from the smoker and let them rest for an hour. Using two forks, pull the meat apart into shreds.
- To make the corn salsa, char the corn over high heat until lightly blackened. Remove the kernels from the cob and mix with finely diced onions. Drizzle Itza vinegar and Kinda Sweet BBQ sauce over the mixture and stir well.
- To assemble the tacos, warm the flour tortillas and place a handful of fresh spinach leaves on each. Add a generous helping of pulled pork, followed by a spoonful of corn salsa. Finish each taco with a drizzle of Sorta White BBQ sauce.
