Preheat your smoker to 120c
Season your meat generously with Lanes BBQ Australia Prime
Insert a temperature probe into the thickest part of the meat and smoke until the internal temperature reaches around 58-59c (this will have our finished steak reach a medium doneness)
Once at temp, remove from the smoker and wrap tightly in foil - rest for 10mins
While resting, turn on your grill and get it nice and hot
Place the steak on the grill and sear for 2-3mins on each side
Serve immediately once happy with the sear.
