Ingredients
- 1 Tomahawk Steak – 1.5kg PreferableÂ
- Lane’s Brancho Seasoning

- ½ Stick of Good Quality Butter
- 3 Garlic Cloves Minced
- 1tsp Chopped Parsley
- 1tsp Chopped Chives
- Dash of Lemon Juice
- ½ tsp Dijon Mustard
- ½ tsp Seeded Mustard

Directions
- Preheat your smoker to 120°C.
- Apply rubs to tomahawk steak—start with a base of Brancho and lightly sprinkle Signature on top.
- Smoke the steak until it reaches your desired internal temperature. For a medium doneness, aim for 60°C.
- Once the steak reaches the desired temperature, allow it to rest for 10-15 minutes while you prepare the cowboy butter. Also, increase the temperature of your smoker or grill to get ready for the searing process.
- To make the cowboy butter, mix together butter, garlic, parsley, chives, lemon juice, mustard, and hot sauce in a ramekin. Melt the mixture either in the microwave or on the smoker.
- When your smoker or grill is searingly hot, sear both sides of the steak for up to 90 seconds, or until you achieve your preferred level of sear.
- Remove the tomahawk steak and butter from the smoker, slice, and savour!
