Side of salmon (Skin Removed)

1 Cup brown sugar

Lane's Magic Dust

Lane's Kinda Sweet

50g Unsalted Butter

Chopped green onions

Sesame seeds
Directions
Trim up your salmon and cut into 1 inch cubes
add the salmon cubes and brown sugar to a bowl add enough magic dust and honey to coat the salmon. toss to coat and leave to cure overnight.
Preheat your smoket to 275f / 135c
drain the excess liquid and place salmon cubes on a wire rack ontop of a tray.
re coat the salmon with a sprinkle of magic dust and place on the smoker
After half an hour coat the cubes with a mixture of melted butter and honey.
After another half an hour the honey should have set so coat with a layer of Lane's Kinda Sweet.
After that layer has set (about 15 mins) By now you should have nice sticky soft burnt ends. The salmon will dry out quickly from here so make sure you keep an eye on it.
Take the burnt ends off the smoker and garnish with spring onions and sesame seeds. Eat straight away, they won't last long!!
