- 6 Pork Belly rashers

Lane’s Australia Sweet Lemon Pepper Seasoning
- 200g Boiled Potatoes
- Garlic
- Kewpie Mayo
- Whole Egg Mayo
- Chives
- Paprika
- Lemon
- Cucumber
Directions
- Preheat the smoker to 150°C.
- Rub the pork belly with the Sweet Lemon Pepper seasoning and transfer it to the smoker. Apply a coat of Lil’ Spicy BBQ Sauce every 20-30 minutes. Remove from the smoker once the pork reaches an internal temperature of 74°C.
- In a bowl, mix boiled potatoes, garlic, chives, diced cucumber, Kewpie mayo, whole egg mayo, and lemon juice. Chill the mixture in the fridge until the pork is done.
- Plate the potato salad alongside the pork and garnish with ground paprika.
- Serve and enjoy!
