Lane’s Its’a Vinegar

Garlic

Pineapple juice

Light soy sauce

Brown sugar

Chicken stock

Directions
Preheat your smoker to 220c
In a bowl, combine 1 cup pineapple juice, 1/2 light soy sauce, 1/2 brown sugar, 1/4 cup chicken stock, 1tbsp ginger, 1tbsp garlic, 2tbsp Its’a Vinegar, and a generous sprinkling of Island Dust
Marinate for min 1hr, up to 6hrs
Place the wings onto a wire rack and smoke until the internal temperature hits at least 74c
Transfer the excess marinade to a sauce pan, add some honey and cook thoroughly until boiling and the sauce has reduced and thickened.
Pour the sauce over the wings and garnish with diced green onions
Dig in!
